Mimi's Mac and Cheese

Ingredients

  • 8 oz macaroni, cooked & drained
  • 1 stick butter, cut in chunks
  • 3 cups sharp cheese (reserve 1 cup for top)
  • ½ cup Velveeta
  • 1 egg
  • 2 cups milk
  • Salt and pepper

Instructions

Spray crock pot. Mix up all ingredients, reserving 1 cup of cheese. Pour into crock pot and sprinkle the reserved cup of cheese on top. Cook on low for 3 hours.

Baked Beans

Ingredients

  • 1 big can Bush's baked beans (country style preferred)
  • 1 lb sausage
  • 1 onion
  • Cattleman's BBQ sauce
  • Brown sugar

Instructions

Drain the can of beans. Brown the sausage and onion in a skillet. Pour beans into an aluminum pan. Mix in sausage and onion with grease. Pour Cattleman's evenly over the top and spread a thin layer of brown sugar. Stir and taste. Add more Cattleman's or brown sugar if necessary. Cover with foil and bake at 325°F until warm, about 20 minutes.

Note: Hands down there is no competition. These are the best baked beans and my daddy makes them. I've stopped eating other people's baked beans. It's just disappointing. And that's all I've got to say about that.

Brown Rice Casserole

Ingredients

  • ½ stick butter, melted
  • 1 cup long-grain parboiled rice, uncooked
  • 1 can French onion soup
  • 1 can beef consommé soup

Instructions

Combine all ingredients. Place in a covered casserole dish. Bake at 350°F for 1 hour.

Bonus tip: Arrange chicken thighs on top before baking. May need to increase cook time by 15 minutes. I actually get skin-on thighs and remove the skin from half of them. Cholesterol adds flavor! 😄
Note: This is Nannie's (Celia Wood) original recipe. Use long-grain parboiled rice — not instant — so it cooks up properly in the hour.

Fried Cabbage

Ingredients

  • 1 head cabbage
  • 2 strips bacon
  • ½ cup water
  • Salt and pepper

Instructions

Cut bacon with scissors and fry in a cast iron skillet. While bacon fries, slice cabbage into thin strips. Add cabbage to pan with water, salt, and pepper to taste. Cook covered for 30–40 minutes. It gets sweeter the longer it cooks. Stir occasionally.

Green Bean Casserole

Ingredients

  • 2 cans French green beans
  • 1 can cream of mushroom soup
  • 3–4 T sour cream
  • 1⅓–1½ cups French fried onions (one 5–6 oz container)

Instructions

Mix the green beans, soup, sour cream, and half the French fried onions together. Pour into a casserole dish.

Bake at 350°F for 20 minutes. Remove from oven, spread the remaining onions evenly over the top, and bake for another 5 minutes until the onions are golden and crispy.

Note: Mom used to make this all the time. It's my favorite green bean casserole.

Green Beans

Ingredients

  • Fresh green beans
  • Thick ham slices (country preferred)
  • Small potatoes
  • Butter

Instructions

Add all ingredients to a pot. Boil until everything is soft, 30–40 minutes.

Variation — Green Bean Stew: Add almost equal parts ham and potatoes to produce a "stew." Serve with butter as a main course.

Home Fries

Ingredients

  • ~1 lb yellow potatoes
  • 1–2 onions
  • Butter
  • Dale's seasoning
  • Oil for frying

Instructions

Slice the potatoes and onions no more than ½ inch thick. Place in a cast iron skillet with about an inch of oil — enough to coat but not submerge. Cook on medium-high until the oil bubbles, then reduce heat. Cook until the potatoes are soft. Add Dale's and butter at the end for extra flavoring.

Variation: If you have a can of mushrooms you can add them towards the end as well.

Lima Beans

Ingredients

  • 2 pieces bacon
  • Lima beans
  • Water
  • Butter
  • Salt and lots of pepper

Instructions

Cut bacon with scissors and fry. Add lima beans straight to pan and cover with water. Add a dab of butter, salt, and lots of pepper. Cook uncovered for about 20 minutes.

Mashed Potatoes

Ingredients

  • Enough potatoes to fill your saucepan, cut in chunks (skin on)
  • ½–1 stick butter
  • ~1 cup sour cream
  • ½ T seasoned salt
  • 1 T pepper
  • ½ T rosemary
  • ½ T thyme
  • 1 clove garlic
  • ½–1 cup grated Parmesan

Instructions

Boil potatoes until soft. Drain off water. Add remaining ingredients and mash with a fork or potato masher. I like to serve mashed potatoes thick and lumpy so it's almost a creamy baked potato. If you want them creamier, use some milk and a mixer.

Note: These are certainly not the healthiest potatoes, but they sure taste good. And for the record — POTATOES ARE VEGETABLES. Botanically speaking. Glad that's settled.

Succotash

Ingredients

  • ¼ cup butter
  • 2 cups frozen lima beans
  • 1 can diced tomatoes
  • 2 cups frozen corn
  • Salt and sugar to taste (~2 tsp sugar)

Instructions

Melt butter in saucepan on low. Add lima beans and salt to taste; cook for 20 minutes. Add tomatoes, corn, and sugar; cook until warmed through, about 10 more minutes.

Note: Original recipe called for 1 cup butter total. Could also add okra if in season, or skip tomatoes for a simpler version.
